Banana bread with bits of chocolate

I have to admit, I just realized that the three recipes that I have added here are either with bananas, either with chocolate. Or both haha! But what can one do when this combination is just sooooo good?

I make this banana bread in two different variations - either with nuts, either with chocolate chips but you can also go for both, the more the better, right? :) I would usually just mash ripe bananas but once as I went watching some recipes online, I have seen one where the person (I seriously can't find the original video anymore :( !!) would put the bananas to the over first (still with the peel on) on 350F for 15 mins. Trust me, it makes ALL THE DIFFERENCE! Just... yum! The taste of bananas and the natural sugar will just explode in your mouth as you eat the banana bread!

You will need:

  • 4 ripe bananas

  • 500g all purpose flour

  • 2 tsp bicarbonate soda

  • 3 tsp baking powder

  • 2 tsp cinnamon

  • 10 tbsp vegan butter, melted

  • 10 tbsp vegan yoghut

  • 1 tsp vanilla extract

  • 2 egg replacements

  • 1/2 cup maple syrup

  • 50g vegan chocolate chips

  • pinch of salt

Bananas are one of the best sources of B6 and are rich in vitamin C. One medium size banana also contains your daily needs of potassium. So here you go, a reason to have one right now! :)

Preheat your oven to 375F.

Mash your bananas so they are all liquidy. As per my tip, they will taste even better if you bake them first (scroll up). Mix then together your wet ingredients in one bowl, your dry ingredients in another. Incorporate your dry ingredients into your wet ingredients and mix well. Pour the whole mix into your greased baking pan and place to the oven. Bake for 45-55 minutes. You can stick a tooth pick or a wooden skewer into it to see, whether it's done. If you take the stick out clean, you are good to go!
